Within about two weeks, the inoculated bags are transferred to an incubation room, where the temperature is maintained ideally between 21 to 22 degrees Celsius. This temperature range promotes optimal mycelium growth and substrate consumption. As the mycelium fully colonizes the bags, typically within two weeks, they turn white.

At this stage, the bags are moved to a fruiting chamber, which must meet specific conditions: a controlled temperature range, high humidity, specific light spectrum, and low carbon dioxide levels. Small holes are made in the bags to allow fresh air and humidity to reach the mycelium and substrate, facilitating mushroom growth.

After approximately one week in the fruiting chamber, fresh mushrooms emerge, ready for harvest. Alternatively, log cultivation offers an outdoor method, albeit labor-intensive and slow. This process involves obtaining logs from a tree company and purchasing spawns. The logs are inoculated with a mixture of mushroom spores and sawdust at the onset of the growing season. Over the following months, mushrooms grow on the logs, benefitting from temperate weather conditions characterized by cold rain followed by sunshine, eventually making their way to store shelves and dinner plates.
